Pros of using photo shop is the pictures are digital and your not wasting a lot of film for the pictures, cons of using photo shop is you have to use the move tool to move the pictures around instead of physically doing. Pros of using physical printing is you get to move the pictures around physically, Cons of using physical printing is it cost a lot for the film and to have them developed.
I prefer the very organized and exact because i have a bit of ocd.
